What we do when...

Dinner – Choice Menu

Peel's Tuesday to Saturday

Food and drink is at the centre of what we do, with Michelin starred, four AA rosette Peel’s restaurant running as the living heart of the building. We take you off the beaten track with our seasonal, hand crafted, and local products and produce.

Head Chef Rob Palmer creates simple dishes using seasonal produce, often picked from the Manor’s own kitchen gardens, cooked using modern techniques. His aim is not to alienate his guests by presenting them with something unrecognisable on a plate. Instead he looks to the seasons and to our Victorian roots to present utterly English menus.

Peel’s restaurant is open Tuesday to Saturday for dinner reservations from 7pm-9pm.

Dinner – Tasting Menus

For his tasting menus Head Chef Rob always starts with a garden dish. Our walled kitchen garden is still a work in progress but much of his inspiration comes from what’s sprouting in here. Seasonal tomatoes, asparagus, beetroot, give a refreshing start to the tasting menu. Mains are determined by the seasons once again, whether it’s a colourful lavender duck and carrot in the summer or mallard, celeriac and salt pear in game season. With all of Rob’s tasting menus he wants to create a sense of cohesion; he sees no point in placing seven completely irrelevant dishes in sequence to his guests, no matter how exquisite!

Wine List

Fred's Monday to Friday

Newly appointed Wine Director, Sam Olive, and Sommelier, Ross Morton, are working towards a list that show cases the best of the ‘natural’ wine movement.  Sometimes organic, sometimes biodynamic but always with a determination to bring wines that reflect the fruit in the field. Sam’s  talks about “Back to the Future Wines”  produced by forward thinking winemakers. Creators of quality wines made from eco-friendly, delicious and happy grapes that express their origin.  Our wines by the glass capture this philosophy perfectly and a new and progressive wine list format is being prepared for launch in January 2017.  We want to appeal to a sense of adventure and take guest off the beaten track where great value wines can be enjoyed.
